First of all — Happy Memorial Day Weekend to everyone out there in blog land.
If your weekend has been anything like ours, I am sure you are exhausted by now and are having a lazy day. Maybe that’s just because I am 6 months pregnant and feel like I am hauling around my own personal space heater with me everywhere I go.
Friday, we had a nice relaxing evening. I made dinner (but didn’t take pictures — shoot!) and then we ran some errands and got haircuts. One of the amazing things about pregnancy is that your hair grows incredibly fast and your body actually loses less hair than normal. So you may have thicker hair, which for the thin haired ladies like myself is nice, but you also look ragged and homeless much faster. A haircut was necessary.
Friday night was also one of those nights where I had a very distinct pregnant moment — I totally forgot how to bake. Since my second trimester started, I have screwed up a few dinners — most famously the one where I charred a gorgeous cut of beef on the grill, so badly that we had to take our guests out to dinner because it was inedible. Now, as you all know, I love to cook and usually do a great job of it — but this baby is sucking all of my culinary skills out of me.
So Friday, I had to make a cake for Lauren’s family’s party on Saturday. A triple chocolate cake with strawberry filling and fresh strawberries on top. I have made it a million times. It is amazing. Usually. Friday however, the baby was sucking extra hard on my culinary artery and took all of my brain power. The cake was a disaster! So much so that it ended up in the trash can. Without boring you too much, I can tell you that it did not cook long enough but I still tried to take it out of the pan, then it broke, then there were strawberry preserves and icing everywhere — and then, there were tears. So, Saturday Lauren went to her family’s party empty handed. I made up for it Sunday though with a triple chocolate cake with vanilla chocolate chip icing. I think I redeemed myself.
Saturday for me was spent with my dad’s family, who has not seen me since we conceived in December. It was a good time and they all looked a little surprised to see my 6 month belly all day. They knew we are pregnant, but seeing it is a whole different ball game.
Yesterday was nice. A family cookout with Lauren’s family (they really like parties). And what would a family event be without yours truly getting into an above ground pool without a ladder, and then, only after being in the pool, having to figure out how to get out of it. It was like the staff at Sea World were pulling a whale from it’s tank, but the whale was laughing hysterically and was of absolutely no help. I have learned to look before I leap, and plan out how to get my giant belly out of situations.
Today we are having a rather relaxing day. We slept 10 hours (yay!!!!) and are having a small cookout with friends later on this afternoon. 🙂
Oh! And for those who are interested, here is the recipe for the Teriyaki Turkey Burgers I made on Friday — OMG they were AMAZING!!!
Teriyaki Turkey Burgers
- 1.25 lbs of ground, lean turkey (we used 93% lean)
- 1 Tbsp of fresh grated ginger
- 1 Tbsp of freshly minced garlic
- 1 tsp of Sesame Oil
- 1/4 c. of reduced sodium Teriyaki sauce
- 1/4 c. scallions
- 2 tbsp cilantro — we love cilantro, so I added a little more
- 1 large egg white
Mix everything in a bowl and form 4 patties.
Coat each side of the patty with a quick spray of nonstick cooking oil.
We cooked ours in a pan (with no added oil or anything), but you can easily grill them too.
I serve ours on one of those flatbread rolls (Pepperidge Farm Deli Flats) and served sliced cucumbers, baby carrots and grilled sweet potatoes (left over from the night before) on the side. Yum!
