Lillian celebrated her 10 week birthday this week, and my my my how things have changed.
She is now sleeping from about 9:00 p.m. – 1 or 2 a.m. (thank you thank you thank you) and then gets up every 2.5 hours after that until we just have to get out of bed. We’re all still sleeping in the same room (us in the bed and Lillian in her bouncy chair in the pack n play). After getting up around 7, she is ALL smiles until about 10 a.m. and then takes a nice long nap. We have gone from having a narcoleptic that sleeps after (and sometimes during) every meal, to a real baby that interacts and plays. She mimics our faces and Lauren has to remind me to make nice faces around her since we have a little shadow now. Apparently I grimace more than I realize, and Lillian now does too. Ha!
She is gaining weight well. Last Monday in the breastfeeding group she weighed in at 9lbs, 13oz. Yay! She finally fills out clothes well and can even wear some 3 month clothes! Yippee.
Her hands are her best friends and our worst enemies. They are the cause of excessive drool, some crying and gagging fits when accidentally jammed down her throat and the unwelcomed wakefulness when she flails them around. On the positive side of things, they serve as her push off point for her favorite past time — rolling over. This morning she did it over and over again, giggling constantly, for about 15 minutes. She also uses them to reach out and touch the puppies, which she can’t figure out if she likes, or really hates. The jury’s still out on that one.
All in all, things are great. We are definitely adjusting more and more each day, and I have even started cooking again — thanks to the fantastic Christmas present that we bought each other — new knives! Now before you gasp at the price, we got them on super sale during Cyber Monday — well over 50% off, and they were needed. Our old knives were crap, which we never fully realized (although we had an idea) until the new ones came in. I was cutting up onions the other night and hardly put any force to cut them. It was like slicing through air. Love them.
Here are a few short recipes for you, which should excuse my infrequent posting.
Mexican Tortilla Soup
2 cups of cooked, shredded chicken (we used Turkey since we had so much leftover)
6 cups of chicken broth
2 cloves of garlic, minced.
1 vidalia onion, diced.
2 serano peppers, minced (with gloves on!)
4 corn tortillas, cut into small pieces.
2 large tomatoes, diced.
— Saute garlic, onions, peppers and tomatoes in olive oil until onions are clear.
— Add broth, chicken, cumin (to taste) and tortillas and simmer until thick.
— Serve over rice, with a little fresh lime juice and any, or all of the following tasty toppings: sour cream, shredded cheese, crunchy tortilla strips, beans.
2lbs of ground beef or turkey
1 long breadstick from bakery (we used leftover breadsticks that were getting a little stale), finely finely chopped
2 cloves of garlic, minced.
1/2 of a red onion, minced.
1/2 cup of freshly grated parmesan cheese
— combine all ingredients in bowl, mixing gently with your hands.
— form meatballs and lightly sear them in a pan.
— Place meatballs in a pot and cover with your favorite homemade (or store bought) spaghetti sauce.
— Let simmer for about an hour. Serve over pasta or in rolls to make meatball subs (great football food!)
